Baked Goats' Cheese with Walnut & Apple

While enjoying the sights and sounds of the Tour de France from the depths of winter in Australia, we were inspired to create this oh so delicious breakfast using goats’ cheese and our own Walnut, Apple and Cinnamon Granola. It’s utterly decadent while at the same time being beautifully light. The perfect start to the day (or even a cheeky late-night tour snack).

 

C'est manifique!

INGREDIENTS (serves 4)

  • Butter for greasing 

  • 100g Goat’s cheese 

  • 100g Walnut, Apple & Cinnamon Granola 

  • 200mL Crème Fraiche 

  • Apple, thinly sliced 

  • Honey for drizzling

Preheat the oven to 180°C and butter the inside of a small baking dish.

Cover the bottom of the dish with slices of goat’s cheese. Generously sprinkle a layer of Walnut, Apple & Cinnamon Granola over the goat’s cheese.

Spread with crème fraiche. Top with thin slices of apple before sprinkling with more granola and drizzling with honey. Finish with several slices of goat’s cheese. 

4.
Bake at 180°C for 20 mins, then turn up the temperature to 230°C until the goat’s cheese is nice and caramelised (about 3-5 mins). Serve immediately with more freshly sliced apple. 

This can also be made into individual serves in ramekins if you prefer. 

Note: All ovens are different, and my oven is a slow oven, so please adjust baking temperature/time to suit your oven. 

So light, so delicate and yet decadent! C'est manifique!
