What do you do when you love green beans, but your loved ones don’t? You make Green Beans with Mild Chilli Spiced Dukkah all for yourself!

This is one of my go to lunches, and it easily doubles as a great side dish to accompany any meal from low key casual dinners to fine dining.

So, so simple and full of umami deliciousness – your tastebuds and your tummy will thank you.

INGREDIENTS

  • 150g Green beans, trimmed

  • 15g Pine nuts, toasted

  • Feta, to crumble

  • Sundried Tomatoes, to tear and scatter

  • Extra Virgin Olive Oil, to drizzle

  • Mild Chilli Spiced Dukkah, to sprinkle

1.

Toast the pinenuts until golden.

2.

Bring a saucepan of water to the boil. Add the trimmed beans and boil for approximately 1-2 minutes – the beans should have a little bit of crunch left.

3.

Drain and place the beans onto a serving dish.

4.

Drizzle with extra virgin olive oil, garnish with crumbled feta and torn sundried tomatoes, scatter with toasted pinenuts, and finally sprinkle generously with Mild Chilli Spiced Dukkah.

5.

Serve immediately.

Enjoy!
