BAKED GOATS CHEESE WITH WALNUT & APPLE
While enjoying the sights and sounds of the Tour de France from the depths of winter in Australia, we were inspired to create this oh so delicious breakfast using goats’ cheese and our own Walnut, Apple and Cinnamon Granola. It’s utterly decadent while at the same time being beautifully light. The perfect start to the day (or even a cheeky late-night tour snack).
INGREDIENTS (serves 4)
200g goats’ cheese cut into 16 slices
200g crème fraiche
100g Oh! So good foods Walnut, Apple & Cinnamon Granola
Honey to drizzle
More granola to garnish
Preheat the oven to 180°C.
Butter the insides of 4 ramekins using your fingers.
Combine the crème fraiche and Walnut, Apple & Cinnamon granola in a bowl and mix.
Into each ramekin place 3 slices of goats cheese. Top with ¼ of the crème fraiche/granola mix. Add another slice of goats cheese then drizzle to taste with honey and garnish with a sprinkle of granola.
Bake for 20 mins @ 180°C.
Serve with slices of apple drizzled with a little honey and even a little more of the Walnut, Apple and Cinnamon Granola for little crunch!
